I love red rocks, especially. Mt. Charleston is also cool.... But you do have to have a car. The engineer in my is hooked on Hoover Dam. BUt in my experience, neither the airfares nor the hotel rates are outstanding. But (traveling on business) I've always been on or near the strip...
As you say, the strip is fun in limited doses. My forst time to Vegas, I was there 2 weeks, including the weekend between. That pretty well dosed me up. I'm way to low-budget for the shows, though we did take the family to the Medieval show at the Camelot a few years back. I've never been to the grand canyon, a situation I need to remedy.
The Grand Canyon is truly amazing. In addition to walking about the park, we took a small aircraft tour, at it was awesome. I've never been below the rim, but it's something to do eventually.

Cheapest vacation on earth is Vegas if you don't gamble. Been there twice, and enjoyed Red Rocks, Hoover Dam, and Searchlight as well.
